Crawfish Mac & Cheese Stuffed Turkey Leg
Heyyyy my Cajun foodies!!
This weekend the Turkey Leg Hut came to do a Pop up food truck in Dallas! & baaabbby when I tell you the lines where from Dallas to Jesus! lol Like the lines were soooo long but It's the Famous Turkey Leg Hut.
On Friday, I decided that I wanted to travel to Ft. Worth to get me a turkey leg. I got in line at 10am. When I got in line I didn't realize that there were other people around the building that had been in line since 8am. However, I was dedicated. After 5 hours of sitting and waiting, I was hungry, tired, I didn't have any snacks or water.... I decided that i was going to just go home and make my own.
So here's the recipe! I hope you enjoy it.
I didn't have time to smoke a turkey leg for 8 plus hours so I went to Walmart and I picked up 4 legs already smoked. I then went home and baked them to get them that falling off the bone tender like the Turkey leg hut is known for having..
Ingredients:
Turkey Legs-
3-4 smoked turkey legs
5 tablespoons of unsalted butter
2 caps full of Louisiana Crab Boil
1 tablespoon Tony seasoning
1/2 tablespoon of Garlic Powder
1/2 tablespoon of Onion Powder
1/2 tablespoon of Cayenne Pepper
Crawfish Mac & Cheese-
Elbow, Penne, or Rotini
2 cups of chicken stock
2 cups of water
1 pint of heavy whipping cream
2 tablespoons of unsalted butter
.5lbs of Sharp Cheddar
1/2 cup of Velveeta
1/2 cup of Mozzarella
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon of Tony/s or Seasoning Salt
1lb of crawfish tails
4 tablespoons of butter
4 tablespoons of flour
Mix together well. Tear enough foil paper to wrap the turkey leg up(like they do at the fair). Place the turkey leg on the foil and brush the ENTIRE turkey leg with the mixture. (If you have time you can inject the turkey.... NOW THAT'S FLAVOR!) Close the foil and wrap the legs tightly. Place on a wire rack on a baking sheet(the turkey legs will release juices and the baking pan will catch it without soaking the wrapped legs) Bake at 400 degrees for 2.5 hours.
Crawfish Mac & Cheese(This is really easy)
Melt 3 tablespoons of butter into a pan
Add Crawfish crawfish tails into a pan
Add 1 tablespoon of Tony's Seasoning
Add 1 Cup full of Louisiana Crab Boil.
Cook for 4 mins on Median Hight.
Making Roux for Mac & Cheese.
The roux will ensure that the Mac & Cheese is creamy, smooth, and thick.
Melt 4 tablespoons of butter
Slowly stir in 4 tablespoons of all purpose flour.
Continue stirring for 3 minutes
Sit aside.
In a pot add heavy whipping cream. Stir in the roux mixture well. Add the sharp and Velveeta cheese into the pot. Stir and mix until all of the cheese has melted. Then add Mozzarella cheese to the pot. Add 1/2 of a teaspoon of salt. & 1/2 of teaspoon of pepper.
Noodles
Fr ultimate flavor: boil noodles in 2 cups of chicken stock and 2 cups of water.
Allow noodles to cook for 12 minutes.
ALL TOGETHER NOW:
I like to add my cheese into the noodles to make sure to measurements are on point.
Pour half of the cheese mixture onto the noodles and stir.(At this point it will pend on how you like it.) If needed pour in the rest of the mixture and stire well. Next add the crawfish & it's juices into the pot with the mac & cheese. Stir well.
Once Turkey Legs are finished....
Remove the foil from the turkey leg and split the top part of the turkey leg. Pour over a generous amount of Mac & Cheese on top of the turkey leg.
